Ingredients

Leeks, 4 per person, washed and cut into ¾-inch by ¼-inch pieces

1½ cups Dry Creek Vineyard Fumé Blanc

½ cup water

¼ cup rice wine vinegar

2 teaspoons salt

1 tablespoon sugar
- Crushed pistachios and/or chopped herbs, for garnish (optional)
Method
Cut off roots and greens from leeks; remove the first layer. From the top end of the leeks, cut into quarters three-fourths of the way down, then fold back and wash out any soil.
Braise leeks in Fumé Blanc, water and salt until tender, about 4 minutes. Remove leeks from pan to cool.
Reduce remaining liquid into a paste by boiling down for approximately 10 minutes. Remove from heat, and stir in oil, vinegar and sugar. Pour over leeks when ready to serve.
For added texture or color, garnish with crushed pistachios and/or chopped herbs.
